Sticky Toffee Pudding

This is a Vegetarian dish

Ingredients:

  • 2oz margerine
  • 6oz castor sugar
  • 1 beaten egg
  • 6 oz dates
  • 4 oz self raising flour
  • 4 oz wholemeal flour
  • 1 tsp bicarbonate of soda
  • ½ pint boiling water
  • 1 tsp vanilla essence

For Sauce:

  • 4oz butter
  • 8 oz light brown sugar
  • ½ pint double cream

Equipment:

  • Metal dish app: 9" x 7" x 2"
  • Moderate oven (GM 3 to 4)

Preparation time: 30mins

Cooking time: 1hour

Sticky Toffee Pudding

This is a fabulous recipe for a very indulgent Sticky Toffee Pudding. If you've been lucky enough to have been on one of our Walking Holidays when this was served you'll definitely remember it!

Cooking Instructions:

  1. Place dates & bicarbonate of soda in boiling water and leave to soak, preferably overnight.
  2. Cream marge & sugar, beat in the egg and vanilla essence. Add flour & date mixture. Mix well.
  3. Pour into lightly greased metal dish and bake in moderate oven for 40 - 45 mins.till firm to touch.
  4. Make sauce - melt butter over low heat add sugar and stir till dissolved. Add cream and simmer for 4-5 mins.
  5. Take cake from oven, prick sponge all over with fork before pouring on the sauce, spoon around to encourage it to soak into sponge. Return to oven for 5 mins. Serve hot. Enjoy.
