This is a very simple recipe for a quick and tasty Brocolli Soup suitable for vegetarians.
Finely chop the onion. Add to the pan and sautee for a couple of minutes until soft and golden brown coloured.
Rougly chop the potato. Add potatos and stock to the onions. Bring to the boil then simmer for 30 minutes.
Carefully chop brocolli into florests, removing any leaves. Add brocolli florets to the pot and simmer until tender.
When brocolli is soft remove pot from heat and leave to cool. When cool carefully puree contents of pot.
Slowly add milk to the puree a little at a time stirring continuously. Season to taste. Heat thoroughly.
Serve Brocolli Soup with a bowl of cráme fraiche and some warm crusty bread.
