This is a fabulous recipe for a very indulgent Sticky Toffee Pudding. If you've been lucky enough to have been on one of our Walking Holidays when this was served you'll definitely remember it!
Place dates & bicarbonate of soda in boiling water and leave to soak, preferably overnight.
Cream margerine & sugar, beat in the egg and vanilla essence. Add flour & date mixture. Mix well.
Pour into lightly greased metal dish and bake in moderate oven for 40 - 45 mins. until firm to the touch.
Make sauce - melt butter over low heat add sugar and stir till dissolved. Add cream and simmer for 4-5 mins.
Take cake from oven, prick sponge all over with fork before pouring on the sauce, spoon around to encourage it to soak into sponge. Return to oven for 5 mins. Serve hot. Enjoy.
