Corn Chowder

This is a Vegetarian dish

Ingredients:

  • 30g butter
  • 2 onions, diced
  • 2 sticks celery, chopped
  • 2 cloves garlic, finely chopped
  • salt & black pepper
  • pinch dried sage, thyme, oregano
  • 1.1L vegetable stock
  • 390g potatoes, peeled and diced
  • 450g sweetcorn
  • extra 1/2oz/15g butter
  • half small red pepper, diced
  • 60ml single cream
  • 2 tsp sugar, optional
  • parsley, butter, and black pepper to garnish

Equipment:

  • Large saucepan
  • Wooden spoon
  • Hand blender

Preparation time: 10mins

Cooking time: 30mins

Corn Chowder

This is one of our favourite recipes for real hearty Corn Chowder. Serve your large bowl of Corn Chowder with some warm crusty bread for a delicious lunchtime meal.

Cooking Instructions:

  1. Melt the butter in a large saucepan and sweat the onions, celery and garlic with seasoning for 10 minutes.
  2. Add the herbs and cook for a minute before adding the water or stock and the potatoes.
  3. Bring to the boil and simmer for 20 minutes. Add the corn to the soup and bring to the boil. Puree half the soup and return to the pan.
  4. Saute the peppers in the extra butter, and add them to the soup with the cream. Adjust the seasoning and add a little sugar if the corn isn't very sweet.
  5. Serve the soup garnished with a small pat of butter, chopped fresh parsley and a grinding of black pepper.
