C-N-Do's Famously Fabulous Christmas Cake


This C-N-Do Scotland's Famously Fabulous Christmas Cake recipe has evolved over the years hence the choice of ingredients and the flexibility to add those that you really enjoy. Whichever version you make it is a simple 'mix it all together' and bake. Easy to prepare, great as a Christmas cake or for any other time of year.

Cooking Instructions:

  1. Melt the butter in small pan. Then mix all the remaining ingredients together well adding in the melted butter.

  2. Put the mixture into a 9in diameter (round) cake tin lined with two layers of greaseproof paper and wrapped in two layers of newspaper.

  3. Bake the mixture in an oven on the middle / lower middle shelf, at 180°C / 350°F / gas mark 4, for one hour.

  4. Cover the cake with several layers of absorbent kitchen paper. Bake for three hours at 150°C / 300°F / gas mark 2, or until a skewer will emerge clean when stuck in the middle.

  5. Cool the cooked Christmas Cake for a few hours, then tip out upside down on a wire rack and peel off the paper.

  6. Enjoy your delicious C-N-Do Scotland Christmas Cake, or if you must, store in an airtight container.
