Beef Fajitas

Ingredients:
- 3 tbsp olive oil
- 600g sirloin steak
- 1 red pepper, de-seeded
- 1 yellow pepper, de-seeded
- 2 medium onions, sliced
- 2 cloves garlic, minced
- 1 tsp chilli powder
- 2 tsp ground coriander
- 1 tsp ground cumin
- Squeeze of lime juice
- Salt
- Freshly ground black pepper
- 10-12 flour tortillas
- Sour cream
- Chopped coriander

Beef Fajitas
A traditional Tex-Mex dish, Beef Fajitas is great fun to make and even better fun to eat!
Cooking Instructions:
- Mix together 2 tbsp of the oil, garlic, chilli powder, ground coriander and ground cumin. Add the salt and pepper.
- Cut sirloin steak, read and yellow peppers and onions into strips and place in mixing bowl. Pour over the steak strips, peppers and onions then cover and leave to marinate in the fridge for about 2 hours.
- When you are ready to eat remove steak mixture from the fridge and heat a large cast-iron griddle pan until smoking hot. Toss the steak mixture in the remaining oil and throw them on the griddle pan. Cook until the steak is thoroughly cooked.
- Take the flour tortillas and wrap in aluminium foil and place in the middle of a low oven for 10 minutes.
- When ready to serve remove warm tortillas from the oven, remove from foil and place on a plate. Serve steak mixture in a warm bowl and serve the fresh coriander, sour cream, tomato salsa and guacamole seperately.
- This dish is best served with everyone helping themselves. It's a really fun dish to make and really good fun to eat.
